  • Preserved lemons - 1 whole, flesh removed and rind chopped

  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 200 milliliters

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 30 minutes (or up to overnight in the fridge).
