Ingredients
- Cauliflower - 1 medium head, cut into florets
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Chickpeas - 1 cup, cooked or canned, rinsed and drained
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 200 ml
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the cauliflower florets, olive oil, cumin, cinnamon, coriander, paprika, salt, and black pepper. Toss until the cauliflower is well coated.
- Spread the seasoned cauliflower on a baking tray and roast in the oven for 20 minutes, or until golden and tender.
- While the cauliflower is roasting, heat a skillet over medium heat. Add a tablespoon of olive oil and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper, zucchini, and tomato to the skillet. Cook for another 5 minutes until the vegetables are softened.
- Stir in the chickpeas and vegetable broth, and let the mixture simmer for 5 minutes. Adjust seasoning if needed.
- Once the cauliflower is done roasting, combine it with the vegetable mixture in the skillet. Gently stir to combine.
- Transfer the mixture to a baking dish and bake in the oven for an additional 10 minutes.
- Remove from the oven, garnish with fresh parsley, and serve hot.
