Ingredients

  • Cauliflower - 1 medium head, cut into florets
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Chickpeas - 1 cup, cooked or canned, rinsed and drained
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 200 ml
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the cauliflower florets, olive oil, cumin, cinnamon, coriander, paprika, salt, and black pepper. Toss until the cauliflower is well coated.
  3. Spread the seasoned cauliflower on a baking tray and roast in the oven for 20 minutes, or until golden and tender.
  4. While the cauliflower is roasting, heat a skillet over medium heat. Add a tablespoon of olive oil and sauté the onion and garlic until translucent, about 3-4 minutes.
  5. Add the diced red bell pepper, zucchini, and tomato to the skillet. Cook for another 5 minutes until the vegetables are softened.
  6. Stir in the chickpeas and vegetable broth, and let the mixture simmer for 5 minutes. Adjust seasoning if needed.
  7. Once the cauliflower is done roasting, combine it with the vegetable mixture in the skillet. Gently stir to combine.
  8. Transfer the mixture to a baking dish and bake in the oven for an additional 10 minutes.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
