- Beef chuck, cubed - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, sliced - 1 medium
- Bell pepper, chopped - 1 medium
- Canned tomatoes, diced - 200 grams
- Chickpeas, drained and rinsed - 100 grams
- Beef broth - 250 ml
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Ginger powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro, chopped - 2 tablespoons
- Almonds, slivered - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cubed beef to the pot and brown on all sides, about 5-7 minutes.
- Add the sliced carrot and chopped bell pepper, stirring to combine.
- Pour in the diced tomatoes and beef broth, then add the cinnamon stick, cumin, paprika, ginger, salt, and black pepper. Stir well to combine all ingredients.
- Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
- Bake for 60 minutes, then remove from the oven and stir in the chickpeas.
- Return to the oven and bake for an additional 20-30 minutes, until the beef is tender.
- Once done, remove from the oven, discard the cinnamon stick, and sprinkle with fresh cilantro and slivered almonds before serving.
