- Chicken breast - 200 grams, shredded
- Phyllo pastry - 4 sheets
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Almonds - 50 grams, chopped
- Cinnamon - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large, beaten
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon, melted
- Water - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, shredded chicken, cinnamon, turmeric, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the chicken is heated through and the spices are aromatic.
- Stir in the chopped almonds and parsley. Remove from heat and set aside to cool slightly.
- Lay one sheet of phyllo pastry on a clean surface and brush with melted butter. Place another sheet on top and brush again. Repeat with two more sheets.
- Spoon half of the chicken mixture onto the center of the layered phyllo. Fold in the sides and then roll up tightly to form a log. Place seam-side down on a baking sheet.
- Brush the top with the beaten egg and sprinkle with a little salt and pepper.
- Bake for 25-30 minutes, or until golden and crispy. Allow to cool for a few minutes before slicing.
