Ingredients

  • Globe artichokes - 2
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Breadcrumbs - 1/2 cup
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 1 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the top 1/3 off each artichoke and scoop out the fuzzy choke with a spoon.
  3. In a bowl, mix the breadcrumbs, minced garlic, parsley, cilantro, paprika, cumin, salt, black pepper, and lemon juice until combined.
  4. Drizzle 2 tablespoons of olive oil over the breadcrumb mixture and stir until the breadcrumbs are evenly coated.
  5. Stuff each artichoke with the breadcrumb mixture, pressing down gently to pack it in.
  6. Place the stuffed artichokes in a baking dish. Drizzle the remaining olive oil over the artichokes and add 1 cup of water to the bottom of the dish.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
  8. After 40 minutes, remove the foil and bake for an additional 10-15 minutes until the artichokes are tender and the tops are golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.
