Ingredients
- Globe artichokes - 2
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Breadcrumbs - 1/2 cup
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Water - 1 cup
Steps
- Preheat the oven to 180°C (350°F).
- Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the top 1/3 off each artichoke and scoop out the fuzzy choke with a spoon.
- In a bowl, mix the breadcrumbs, minced garlic, parsley, cilantro, paprika, cumin, salt, black pepper, and lemon juice until combined.
- Drizzle 2 tablespoons of olive oil over the breadcrumb mixture and stir until the breadcrumbs are evenly coated.
- Stuff each artichoke with the breadcrumb mixture, pressing down gently to pack it in.
- Place the stuffed artichokes in a baking dish. Drizzle the remaining olive oil over the artichokes and add 1 cup of water to the bottom of the dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 10-15 minutes until the artichokes are tender and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
