- Chickpeas (cooked) - 200 grams
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Rice paper sheets - 4 sheets
- Olive oil - 1 tablespoon for frying
- Tahini - 2 tablespoons
- Water - 1 tablespoon
Steps
- In a mixing bowl, combine the cooked chickpeas, minced garlic, cumin, coriander, paprika, chopped parsley, lemon juice, and salt. Mash the mixture with a fork or potato masher until it forms a chunky paste.
- Soak the rice paper sheets one at a time in warm water for about 10-15 seconds until they soften. Lay the soaked sheet on a clean surface.
- Place a spoonful of the chickpea mixture on the lower third of the rice paper sheet, fold the sides over the filling, and roll it up tightly to form a spring roll. Repeat with the remaining sheets and filling.
- Heat the olive oil in a frying pan over medium heat. Fry the Babbouche rolls for about 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.
- In a small bowl, mix the tahini with water to thin it out, and adjust consistency to your liking. Serve the Babbouche warm with the tahini sauce for dipping.
