Ingredients
- All-purpose flour - 100 grams
- Sugar - 50 grams
- Yeast - 5 grams
- Milk - 50 ml
- Eggs - 1 large
- Butter - 30 grams, melted
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Raisins - 20 grams
- Rum - 50 ml
- Water - 100 ml
- Lemon zest - 1/2 teaspoon
- Powdered sugar - for dusting
Steps
- In a bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until frothy.
- In another mixing bowl, whisk together the flour, sugar, and salt.
- Add the frothy yeast mixture, melted butter, egg, vanilla extract, and lemon zest to the dry ingredients. Mix until a smooth dough forms.
- Fold in the raisins and cover the bowl with a cloth. Let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat your oven to 180°C (350°F). Grease two small ramekins or a muffin tin.
- Once the dough has risen, divide it into two portions and place them in the prepared ramekins or muffin tin.
- Bake in the preheated oven for about 20-25 minutes, until golden brown and a toothpick inserted comes out clean.
- While the babas are baking, prepare the rum syrup by combining water, sugar, and rum in a saucepan. Heat until the sugar dissolves, then set aside.
- Once the babas are done, remove them from the oven and let them cool slightly before soaking them in the rum syrup for about 10 minutes.
- Serve warm, dusted with powdered sugar.
