Ingredients

  • Zucchini - 2 medium
  • Chicken breast - 300 grams, cooked and shredded
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Almonds - 50 grams, toasted and chopped
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 3 large
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler, then set aside.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, shredded chicken, cinnamon, cumin, paprika, salt, and black pepper to the skillet. Cook for another 5 minutes, stirring occasionally.
  4. Remove the skillet from heat and stir in the chopped almonds, parsley, and mint. Allow to cool slightly.
  5. In a bowl, beat the eggs and season with a pinch of salt. In a separate large skillet, heat the remaining tablespoon of olive oil over medium heat.
  6. Pour half of the beaten eggs into the skillet, swirling to coat the bottom evenly. Cook until set, about 2-3 minutes.
  7. Layer half of the zucchini noodles over the cooked egg, then add the chicken mixture on top, followed by the remaining zucchini noodles.
  8. Pour the remaining eggs over the top and cook until set, about 5-7 minutes. Optionally, you can finish it off in a preheated oven at 180°C for 5 minutes to firm up the top.
  9. Carefully slide the B'stilla onto a serving plate and garnish with additional chopped parsley and mint before slicing and serving.
