Ingredients

  • Raw almonds - 100 grams
  • Water - 500 ml
  • Vegetable broth - 250 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a bowl, soak the raw almonds in water for at least 4 hours or overnight.
  2. Drain the soaked almonds and place them in a blender with 500 ml of fresh water. Blend until smooth and creamy.
  3. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Stir in the ground cumin, ground cinnamon, salt, and black pepper. Cook for another minute to toast the spices.
  6. Pour in the almond mixture and vegetable broth, stirring to combine. Bring to a gentle simmer.
  7. Reduce the heat and let the soup simmer for about 15 minutes, stirring occasionally.
  8. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
