- Raw almonds - 100 grams
- Water - 500 ml
- Vegetable broth - 250 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a bowl, soak the raw almonds in water for at least 4 hours or overnight.
- Drain the soaked almonds and place them in a blender with 500 ml of fresh water. Blend until smooth and creamy.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the ground cumin, ground cinnamon, salt, and black pepper. Cook for another minute to toast the spices.
- Pour in the almond mixture and vegetable broth, stirring to combine. Bring to a gentle simmer.
- Reduce the heat and let the soup simmer for about 15 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
