Ingredients
- Long-grain rice - 1 cup
- Almonds (sliced) - 1/3 cup
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Vegetable broth - 2 cups
- Raisins - 1/4 cup
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro (chopped, for garnish) - 2 tablespoons
Steps
- Rinse the rice under cold water until the water runs clear, then soak for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Stir in the sliced almonds and toast them for about 2 minutes until golden brown.
- Drain the soaked rice and add it to the saucepan, stirring well to coat with the oil and spices.
- Pour in the vegetable broth, raisins, cinnamon, cumin, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and the liquid has been absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped cilantro and serve warm.
