Ingredients

  • Zucchini - 2 medium
  • Egg - 1 large
  • Shredded mozzarella cheese - 100 grams

  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Salsa - 100 grams
  • Sliced bell pepper - 50 grams
  • Sliced black olives - 30 grams
  • Chopped fresh cilantro - 2 tablespoons
  • Sour cream (optional) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out the excess moisture.
  3. In a mixing bowl, combine the grated zucchini, egg, 50 grams of mozzarella cheese, oregano, garlic powder, salt, and black pepper. Mix until well combined.
  4. Line a baking sheet with parchment paper and spread the zucchini mixture into a circular shape, about 1/2 inch thick, to form the pizza crust.
  5. Drizzle the crust with olive oil and bake in the preheated oven for 15-20 minutes, or until golden brown and crisp.
  6. Remove the crust from the oven and spread salsa evenly over the top.
  7. Add sliced bell pepper, black olives, and the remaining mozzarella cheese on top of the salsa.
  8. Return the pizza to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with fresh cilantro, and serve hot with a dollop of sour cream if desired.
