- Tomato salsa - 1/2 cup
- Black beans - 1/2 cup, cooked and rinsed
- Corn - 1/2 cup, canned or frozen
- Red bell pepper - 1, diced
- Red onion - 1/4, diced
- Avocado - 1, sliced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Preheat your oven to 200°C (400°F).
- Slice the zucchini into 1 cm thick rounds and place them on a baking sheet.
- Brush both sides of the zucchini slices with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and black pepper.
- Bake the zucchini slices in the preheated oven for 15 minutes, flipping halfway through until they are slightly crispy.
- Remove from the oven and spread a spoonful of tomato salsa on each zucchini slice.
- Top the zucchini pizzas with black beans, corn, diced red bell pepper, and red onion.
- Return the baking sheet to the oven and bake for an additional 10 minutes until the toppings are heated through.
- Remove from the oven and garnish with fresh avocado slices and chopped cilantro.
- Serve with lime wedges on the side for a fresh squeeze of juice.
