- Zucchini - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Grated Parmesan cheese - 30 grams
- Fresh cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture to prevent sogginess.
- In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, cilantro, cumin, paprika, salt, and black pepper. Mix until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture and flatten it slightly to form a fritter. Repeat with the remaining mixture.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
