  • Zucchini - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture to prevent sogginess.
  2. In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, cilantro, cumin, paprika, salt, and black pepper. Mix until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture and flatten it slightly to form a fritter. Repeat with the remaining mixture.
  5. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel to drain excess oil. Serve warm.
