- Lime juice - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Avocado - 1, sliced (for topping)
- Salsa - 4 tablespoons (for topping)
Steps
- In a large bowl, combine grated zucchini, sweet corn, black beans, cooked quinoa, green onion, cilantro, lime juice, cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.
