- Zucchini - 200 grams, grated
- Sweet corn - 150 grams, fresh or canned
- Red bell pepper - 50 grams, finely chopped
- Green onion - 2, sliced
- Garlic - 2 cloves, minced
- Chickpea flour - 60 grams
- Cilantro - 30 grams, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for grilling
- Whole grain burger buns - 2
- Avocado - 1, sliced
Steps
- In a large bowl, combine the grated zucchini, sweet corn, red bell pepper, green onion, garlic, and cilantro.
- Add the chickpea flour, cumin, chili powder, salt, and black pepper. Mix well until the mixture holds together.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side until golden brown and cooked through.
- While the patties are cooking, toast the whole grain burger buns in a separate pan or in a toaster.
