Ingredients

  • Zucchini - 200 grams, grated
  • Sweet corn - 150 grams, fresh or canned
  • Red bell pepper - 50 grams, finely chopped
  • Green onion - 2, sliced
  • Garlic - 2 cloves, minced
  • Chickpea flour - 60 grams
  • Cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for grilling
  • Whole grain burger buns - 2
  • Avocado - 1, sliced

Steps

  1. In a large bowl, combine the grated zucchini, sweet corn, red bell pepper, green onion, garlic, and cilantro.
  2. Add the chickpea flour, cumin, chili powder, salt, and black pepper. Mix well until the mixture holds together.
  3. Form the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side until golden brown and cooked through.
