- Zucchini - 2 medium (about 400g)
- Ground beef - 200g
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato - 1 medium, diced
- Red onion - 1/4, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Sour cream - 2 tablespoons
- Lime - 1, cut into wedges
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zoodles. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in cumin, chili powder, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
- In a separate pan, lightly sauté the zoodles in a drizzle of olive oil for about 3-4 minutes until just tender but still crunchy. Season with salt and pepper.
- To assemble, place a generous portion of zoodles on a plate, top with seasoned ground beef, and garnish with diced tomato, chopped red onion, and fresh cilantro.
- Drizzle sour cream on top and serve with lime wedges on the side.
