Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground beef - 200g
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato - 1 medium, diced
  • Red onion - 1/4, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Sour cream - 2 tablespoons
  • Lime - 1, cut into wedges

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zoodles. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in cumin, chili powder, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
  5. In a separate pan, lightly sauté the zoodles in a drizzle of olive oil for about 3-4 minutes until just tender but still crunchy. Season with salt and pepper.
  6. To assemble, place a generous portion of zoodles on a plate, top with seasoned ground beef, and garnish with diced tomato, chopped red onion, and fresh cilantro.
  7. Drizzle sour cream on top and serve with lime wedges on the side.
