- Refried black beans - 200 grams
- Fresh mozzarella cheese, shredded - 150 grams
- Oaxaca cheese, shredded - 100 grams
- Ripe tomatoes, diced - 1 medium
- Red onion, thinly sliced - 1 small
- Avocado, sliced - 1 medium
- Fresh cilantro, chopped - 2 tablespoons
- Pickled jalapeños - 2 tablespoons
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine diced tomatoes, red onion, cilantro, lime juice, salt, and black pepper to make a fresh salsa.
- On a baking sheet, spread out the corn tortillas evenly.
- Spread 100 grams of refried black beans on each tortilla.
- Layer shredded mozzarella and Oaxaca cheese over the beans.
- Top each tlayuda with the fresh salsa mixture.
