Ingredients

  • Large corn tortillas - 2
  • Refried black beans - 200 grams
  • Fresh mozzarella cheese, shredded - 150 grams
  • Oaxaca cheese, shredded - 100 grams
  • Ripe tomatoes, diced - 1 medium
  • Red onion, thinly sliced - 1 small
  • Avocado, sliced - 1 medium
  • Fresh cilantro, chopped - 2 tablespoons
  • Pickled jalapeños - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine diced tomatoes, red onion, cilantro, lime juice, salt, and black pepper to make a fresh salsa.
  3. On a baking sheet, spread out the corn tortillas evenly.
  4. Spread 100 grams of refried black beans on each tortilla.
  5. Layer shredded mozzarella and Oaxaca cheese over the beans.
  6. Top each tlayuda with the fresh salsa mixture.
  7. Drizzle with olive oil and add pickled jalapeños on top.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool slightly. Top with sliced avocado before serving.
