- Hominy - 1 can (400g), drained and rinsed
- Black beans - 1 can (400g), drained and rinsed
- Vegetable broth - 2 cups (480ml)
- Tomato - 1 medium, diced
- Red onion - 1 small, diced
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Oregano - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Avocado - 1 small, diced, for topping
- Fresh cilantro - 2 tablespoons, chopped, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 5 minutes.
- Add the diced tomato, cumin, chili powder, oregano, salt, and pepper, and cook for an additional 3-4 minutes.
- Stir in the drained hominy and black beans, followed by the vegetable broth, and bring to a simmer.
- Transfer the mixture to a baking dish and bake in the preheated oven for 25 minutes.
- Remove from the oven and let cool slightly before serving.
- Top each serving with diced avocado and chopped cilantro.
