Ingredients

  • Hominy - 1 can (400g), drained and rinsed
  • Black beans - 1 can (400g), drained and rinsed
  • Vegetable broth - 2 cups (480ml)
  • Tomato - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Avocado - 1 small, diced, for topping
  • Fresh cilantro - 2 tablespoons, chopped, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 5 minutes.
  3. Add the diced tomato, cumin, chili powder, oregano, salt, and pepper, and cook for an additional 3-4 minutes.
  4. Stir in the drained hominy and black beans, followed by the vegetable broth, and bring to a simmer.
  5. Transfer the mixture to a baking dish and bake in the preheated oven for 25 minutes.
  6. Remove from the oven and let cool slightly before serving.
  7. Top each serving with diced avocado and chopped cilantro.
