Ingredients

  • Canned hominy - 240 grams
  • Canned black beans - 240 grams
  • Vegetable broth - 240 ml
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste
  • Avocado - 1 small, diced (for topping)
  • Radishes - 4, thinly sliced (for topping)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a medium skillet, heat olive oil over medium heat and sauté the diced red onion until translucent, about 5 minutes.
  3. Add minced garlic, dried oregano, ground cumin, smoked paprika, and chili powder to the skillet; sauté for an additional 2 minutes until fragrant.
  4. In a large mixing bowl, combine the sautéed onion and spice mixture with the drained hominy, drained black beans, vegetable broth, lime juice, salt, and pepper. Mix well.
  5. Transfer the mixture to a baking dish and spread it evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes to allow the top to crisp slightly.
  8. Once done, remove from the oven and let it cool for a few minutes.
  9. Serve hot, garnished with diced avocado, sliced radishes, and fresh chopped cilantro.
