Ingredients

  • Red onion - 1 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Jalapeño - 1 small, finely chopped (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the vegetable oil in a deep pan over medium heat.
  2. While the oil is heating, cut the corn tortillas into triangles.
  3. Once the oil is hot, carefully add the tortilla triangles in batches and fry until golden and crispy, about 2-3 minutes per batch.
  4. Remove the totopos with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.
  5. In a medium bowl, combine the diced tomatoes, red onion, cilantro, lime juice, jalapeño (if using), salt, and pepper. Mix well to combine.
  6. Serve the crispy totopos warm with the salsa on the side.
