- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Jalapeño - 1 small, finely chopped (optional)
- Salt - to taste
- Pepper - to taste
Steps
- Heat the vegetable oil in a deep pan over medium heat.
- While the oil is heating, cut the corn tortillas into triangles.
- Once the oil is hot, carefully add the tortilla triangles in batches and fry until golden and crispy, about 2-3 minutes per batch.
- Remove the totopos with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.
- In a medium bowl, combine the diced tomatoes, red onion, cilantro, lime juice, jalapeño (if using), salt, and pepper. Mix well to combine.
- Serve the crispy totopos warm with the salsa on the side.
