- Red onion - 50 grams, diced
- Tomato - 1 medium, diced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Begin by cleaning the nopales; rinse them under cold water and remove any thorns.
- Cut the nopales into strips or small squares.
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the minced garlic and diced red onion to the skillet, sautéing until translucent, about 3 minutes.
- Add the nopales to the skillet, season with salt and pepper, and cook for about 10 minutes or until tender.
- While the nopales are cooking, toast the corn tortillas in a separate skillet over medium heat until crispy, about 2 minutes on each side.
- Once the nopales are cooked, add the diced tomato and chopped cilantro, and stir for another 2 minutes.
- Remove the skillet from heat and squeeze fresh lime juice over the nopales mixture.
