Ingredients

  • Corn tortillas - 4
  • Black beans (canned, drained and rinsed) - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/4, finely diced
  • Avocado - 1, diced
  • Lime - 1, juiced
  • Feta cheese (optional) - 30 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Brush the corn tortillas lightly with olive oil on both sides and place them on a baking sheet.
  3. Bake the tortillas in the oven for about 10-12 minutes or until they are crispy and golden brown.
  4. While the tortillas are baking, heat 1 tablespoon of olive oil in a pan over medium heat.
  5. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Stir in the black beans, cumin, salt, and pepper, and cook for 5-7 minutes until heated through and slightly mashed.
  7. Remove from heat and stir in the chopped cilantro.
  8. In a bowl, combine the diced avocado with lime juice, salt, and pepper to make the avocado sauce.
  9. Once the tortillas are ready, remove them from the oven and allow them to cool slightly.
  10. Top each tortilla with a generous amount of the black bean mixture, followed by the cherry tomatoes, red onion, and avocado sauce.
  11. Sprinkle with crumbled feta cheese if desired and serve immediately.
