- Jalapeño - 1, finely chopped
- Lime juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1, ripe
- Coconut cream - 2 tablespoons
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
Steps
- Preheat your grill or grill pan over medium heat.
- In a bowl, combine diced zucchini, eggplant, red bell pepper, jalapeño, lime juice, olive oil, salt, and black pepper. Toss well to coat.
