  • Corn tostadas - 4
  • Zucchini - 100 grams, diced
  • Eggplant - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Jalapeño - 1, finely chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1, ripe
  • Coconut cream - 2 tablespoons
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a bowl, combine diced zucchini, eggplant, red bell pepper, jalapeño, lime juice, olive oil, salt, and black pepper. Toss well to coat.
  3. Grill the vegetable mixture for about 10-12 minutes, stirring occasionally until they are charred and tender.
