Ingredients

  • Zucchini - 150 grams, grated
  • Carrot - 100 grams, grated
  • Potato - 100 grams, grated
  • Chickpea flour - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the grated zucchini, carrot, and potato. Mix well.
  2. Add the chickpea flour, chopped cilantro, minced garlic, finely chopped onion, cumin powder, salt, and black pepper to the bowl. Stir until all ingredients are evenly combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  4. Scoop about 2 tablespoons of the vegetable mixture into the skillet, flattening them slightly to form patties.
  5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on paper towels to absorb excess oil. Repeat with the remaining mixture, adding more oil as needed.
  7. Serve warm with your favorite salsa or avocado sauce.
