Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Chickpea flour - 50 grams
  • Nori seaweed - 2 sheets, finely chopped
  • Red bell pepper - 50 grams, diced
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Cilantro - 20 grams, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. Rinse the quinoa under cold water and then combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the quinoa is cooked and water is absorbed.
  2. In a large mixing bowl, combine the cooked quinoa, chickpea flour, chopped nori, diced red bell pepper, chopped green onion, minced garlic, chopped cilantro, lime juice, cumin, salt, and black pepper. Mix until well incorporated.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty.
  4. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove the patties from the pan and place them on a paper towel to absorb excess oil. Serve warm with additional lime wedges and a side of fresh salsa if desired.
