- plant-based milk - 120ml (1/2 cup)
- baking powder - 5g (1 teaspoon)
- vanilla extract - 5ml (1 teaspoon)
- cinnamon - 1g (1/2 teaspoon)
- maple syrup - 30ml (2 tablespoons) for serving
- coconut oil - for cooking
Steps
- In a mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.
- Add the plant-based milk, vanilla extract, and cinnamon to the mashed bananas and mix well.
- In a separate bowl, whisk together the all-purpose flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Heat a non-stick skillet over medium heat and add a small amount of coconut oil to coat the surface.
- Pour about 60ml (1/4 cup) of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
- Serve warm, drizzled with maple syrup.
