  • ripe bananas - 2 medium (about 250g)
  • all-purpose flour - 100g (3/4 cup)
  • plant-based milk - 120ml (1/2 cup)
  • baking powder - 5g (1 teaspoon)
  • vanilla extract - 5ml (1 teaspoon)
  • cinnamon - 1g (1/2 teaspoon)
  • maple syrup - 30ml (2 tablespoons) for serving
  • coconut oil - for cooking

Steps

  1. In a mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.
  2. Add the plant-based milk, vanilla extract, and cinnamon to the mashed bananas and mix well.
  3. In a separate bowl, whisk together the all-purpose flour and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Heat a non-stick skillet over medium heat and add a small amount of coconut oil to coat the surface.
  6. Pour about 60ml (1/4 cup) of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
  8. Serve warm, drizzled with maple syrup.
