Ingredients

  • Potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Green onion - 2 stalks, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • Whole wheat flour - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced

Steps

  1. Peel and boil the potatoes in salted water for 15 minutes or until tender, then drain and let cool slightly.
  2. In a mixing bowl, mash the potatoes with a fork until smooth.
  3. Add the chopped green onion, cilantro, minced garlic, egg, whole wheat flour, salt, black pepper, and lime juice to the mashed potatoes and mix until well combined.
  4. Form the mixture into small patties, about 5 cm in diameter.
  5. Heat the olive oil in a non-stick skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
  7. Remove the patties from the skillet and place them on a paper towel to absorb excess oil before serving.
