- Fresh corn kernels - 200 grams
- Cornmeal - 100 grams
- All-purpose flour - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Cumin - 1/4 teaspoon
- Cilantro, chopped - 2 tablespoons
- Green onion, chopped - 2 tablespoons
- Egg - 1 large
- Milk - 100 ml
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine fresh corn kernels, cornmeal, all-purpose flour, baking powder, salt, and cumin.
- Add the chopped cilantro, green onion, egg, and milk to the dry ingredients and mix until well combined.
- Heat a skillet over medium heat and add a small amount of vegetable oil.
- Scoop about 2 tablespoons of the mixture onto the skillet for each tortita, flattening them slightly with the back of a spatula.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and place on paper towels to drain excess oil. Serve warm.
