Ingredients

  • Fresh corn kernels - 200 grams
  • Cornmeal - 100 grams
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1/4 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Green onion, chopped - 2 tablespoons
  • Egg - 1 large
  • Milk - 100 ml
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine fresh corn kernels, cornmeal, all-purpose flour, baking powder, salt, and cumin.
  2. Add the chopped cilantro, green onion, egg, and milk to the dry ingredients and mix until well combined.
  3. Heat a skillet over medium heat and add a small amount of vegetable oil.
  4. Scoop about 2 tablespoons of the mixture onto the skillet for each tortita, flattening them slightly with the back of a spatula.
  5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on paper towels to drain excess oil. Serve warm.
