- Pork spine (espinazo) - 300 grams
- Eggs - 2 large
- Almond flour - 50 grams
- Cheddar cheese, shredded - 50 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- Boil the pork spine in a pot of salted water for about 20 minutes until tender. Remove from water, cool slightly, and shred the meat.
- In a mixing bowl, combine the shredded pork spine, eggs, almond flour, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the mixture into the skillet, flattening it slightly to form a pancake shape. Cook for 4-5 minutes on each side until golden brown.
- Add the remaining olive oil as needed and repeat with the rest of the mixture.
- Serve hot, optionally with a side of avocado or low-carb salsa.
