Ingredients

  • Pork spine (espinazo) - 300 grams
  • Eggs - 2 large
  • Almond flour - 50 grams
  • Cheddar cheese, shredded - 50 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Boil the pork spine in a pot of salted water for about 20 minutes until tender. Remove from water, cool slightly, and shred the meat.
  2. In a mixing bowl, combine the shredded pork spine, eggs, almond flour, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the mixture into the skillet, flattening it slightly to form a pancake shape. Cook for 4-5 minutes on each side until golden brown.
  5. Add the remaining olive oil as needed and repeat with the rest of the mixture.
  6. Serve hot, optionally with a side of avocado or low-carb salsa.
