Ingredients

  • Sweet potato - 250 grams
  • All-purpose flour - 50 grams
  • Brown sugar - 30 grams
  • Cinnamon - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Vegetable oil - for frying
  • Powdered sugar - for dusting

Steps

  1. Peel and cube the sweet potato, then boil in water for about 15 minutes or until soft.
  2. Drain the sweet potato and mash it in a bowl until smooth.
  3. In the same bowl, add the all-purpose flour, brown sugar, cinnamon, baking powder, vanilla extract, and salt. Mix until well combined.
  4. Heat a non-stick skillet over medium heat and add a little vegetable oil.
  5. Scoop about 2 tablespoons of the sweet potato mixture into the skillet for each pancake, flattening them slightly.
  6. Cook for 3-4 minutes on each side or until golden brown.
  7. Remove from the skillet and place on a paper towel to absorb excess oil.
  8. Serve warm, dusted with powdered sugar.
