- Sweet potato - 250 grams
- All-purpose flour - 50 grams
- Brown sugar - 30 grams
- Cinnamon - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Vegetable oil - for frying
- Powdered sugar - for dusting
Steps
- Peel and cube the sweet potato, then boil in water for about 15 minutes or until soft.
- Drain the sweet potato and mash it in a bowl until smooth.
- In the same bowl, add the all-purpose flour, brown sugar, cinnamon, baking powder, vanilla extract, and salt. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a little vegetable oil.
- Scoop about 2 tablespoons of the sweet potato mixture into the skillet for each pancake, flattening them slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from the skillet and place on a paper towel to absorb excess oil.
- Serve warm, dusted with powdered sugar.
