  • Egg - 1 large
  • Lemon juice - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a large bowl, combine the shrimp, chickpea flour, cornmeal, chopped cilantro, green onion, minced garlic, egg, lemon juice, baking powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Heat vegetable oil in a non-stick skillet over medium heat until hot.
  3. Scoop about 2 tablespoons of the shrimp mixture and form it into a patty. Carefully place it in the hot oil. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
  4. Fry each patty for about 3-4 minutes on each side, or until golden brown and cooked through.
