  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
  2. In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, chopped green onion, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  4. Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Place it in the skillet and flatten it slightly. Repeat with the remaining mixture, ensuring not to overcrowd the skillet.
