Ingredients
- Zucchini - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Parmesan cheese (grated) - 30 grams
- Green onion (finely chopped) - 2 tablespoons
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
- In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, chopped green onion, garlic powder, salt, and black pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Place it in the skillet and flatten it slightly. Repeat with the remaining mixture, ensuring not to overcrowd the skillet.
- Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel to absorb any excess oil. Serve warm.
