Ingredients

  • Water - 150 milliliters
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetables for grilling (bell peppers, zucchini, and red onions) - 300 grams

Steps

  1. In a mixing bowl, combine the masa harina and salt, then gradually add water while mixing until the dough is smooth and pliable.
  2. Divide the dough into 6 equal portions and roll each portion into a ball.
  3. Preheat a non-stick skillet or griddle over medium-high heat.
  4. Flatten each dough ball using a tortilla press or a rolling pin between two sheets of plastic wrap until they are about 2-3 mm thick.
  5. Cook each tortilla on the hot skillet for about 30 seconds on each side until lightly browned and cooked through. Keep them warm in a cloth.
  6. While the tortillas are cooking, slice the vegetables and toss them with olive oil, salt, and pepper.
  7. Grill the vegetables on the same skillet or on a barbecue until tender and slightly charred.
  8. Serve the warm tortillas topped with the grilled vegetables.
