Steps
- In a mixing bowl, combine the masa harina and salt, then gradually add water while mixing until the dough is smooth and pliable.
- Divide the dough into 6 equal portions and roll each portion into a ball.
- Preheat a non-stick skillet or griddle over medium-high heat.
- Flatten each dough ball using a tortilla press or a rolling pin between two sheets of plastic wrap until they are about 2-3 mm thick.
- Cook each tortilla on the hot skillet for about 30 seconds on each side until lightly browned and cooked through. Keep them warm in a cloth.
- While the tortillas are cooking, slice the vegetables and toss them with olive oil, salt, and pepper.
- Grill the vegetables on the same skillet or on a barbecue until tender and slightly charred.
- Serve the warm tortillas topped with the grilled vegetables.
