  • Whole wheat tortillas - 2 large
  • Black beans - 1 cup, rinsed and drained
  • Cooked chicken breast - 150 grams, shredded
  • Shredded low-fat mozzarella cheese - 100 grams
  • Salsa - 100 grams
  • Corn kernels - 1/2 cup
  • Red onion - 1/4 cup, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the shredded chicken, black beans, corn, red onion, cumin, chili powder, salt, and pepper until well combined.
  3. Place the whole wheat tortillas on a baking sheet lined with parchment paper.
  4. Spread a layer of salsa over each tortilla, leaving a small border around the edges.
  5. Evenly distribute the chicken and bean mixture on top of the salsa layer.
  6. Sprinkle the shredded mozzarella cheese over the top of each tortilla.
