  • Black beans - 100 grams, drained and rinsed
  • Cucumber - 1 small, diced
  • Red onion - 1/4 medium, finely chopped
  • Red bell pepper - 1 small, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente, then drain and rinse under cold water to cool.
  2. While the pasta is cooking, heat a skillet over medium heat and lightly toast the corn tortillas until they are crispy, about 2-3 minutes per side. Remove from heat and cut into strips.
  3. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, black beans, cucumber, red onion, and red bell pepper.
  4. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper to create the dressing.
  5. Pour the dressing over the pasta salad and toss gently to combine.
