- Red bell pepper - 1 small, diced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Olive oil - 2 tablespoons
- Cumin powder - 1/2 teaspoon

Steps
- Cook the whole wheat pasta according to package instructions until al dente, then drain and rinse under cold water to cool.
- While the pasta is cooking, heat a skillet over medium heat and lightly toast the corn tortillas until they are crispy, about 2-3 minutes per side. Remove from heat and cut into strips.
