- Whole wheat pasta - 150 grams
- Corn tortillas - 2 large
- Cooked black beans - 1 cup
- Diced tomatoes - 1 cup
- Chopped onion - 1 small (about 100 grams)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
- Grated low-fat cheese - 50 grams (optional)
Steps
- Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
- While the pasta cooks, cut the corn tortillas into thin strips and heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the tortilla strips to the skillet and cook until they are crispy and slightly golden, about 5-7 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic, ground cumin, and chili powder to the skillet, stirring for about 1 minute until fragrant.
- Stir in the diced tomatoes and cooked black beans, and simmer for about 5 minutes, allowing flavors to meld. Season with salt and pepper to taste.
- Combine the cooked pasta with the sauce in the skillet, tossing to coat evenly. Remove from heat.
- Add the crispy tortilla strips and chopped cilantro, and squeeze lime juice over the top. Toss gently to combine.
- Serve hot, garnished with grated low-fat cheese if desired.
