Ingredients

  • Whole wheat pasta - 150 grams
  • Corn tortillas - 2 large
  • Cooked black beans - 1 cup
  • Diced tomatoes - 1 cup
  • Chopped onion - 1 small (about 100 grams)
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste
  • Grated low-fat cheese - 50 grams (optional)

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
  2. While the pasta cooks, cut the corn tortillas into thin strips and heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the tortilla strips to the skillet and cook until they are crispy and slightly golden, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add another tablespoon of olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
  5. Add the minced garlic, ground cumin, and chili powder to the skillet, stirring for about 1 minute until fragrant.
  6. Stir in the diced tomatoes and cooked black beans, and simmer for about 5 minutes, allowing flavors to meld. Season with salt and pepper to taste.
  7. Combine the cooked pasta with the sauce in the skillet, tossing to coat evenly. Remove from heat.
  8. Add the crispy tortilla strips and chopped cilantro, and squeeze lime juice over the top. Toss gently to combine.
  9. Serve hot, garnished with grated low-fat cheese if desired.
