- Large eggs - 4
- Sweet potatoes - 200 grams, peeled and diced
- Red onion - 50 grams, finely chopped
- Olive oil - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Lettuce leaves - 4 large (for wrapping)
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced sweet potatoes and cook for about 10-12 minutes, or until they are tender, stirring occasionally.
- Add the chopped red onion to the skillet and continue to cook for an additional 3-4 minutes until the onion is translucent.
- In a bowl, whisk together the eggs, salt, and black pepper. Once the sweet potatoes and onion are cooked, remove them from the heat and let them cool slightly before adding them to the egg mixture along with chopped cilantro.
- Return the skillet to the heat and add the remaining tablespoon of olive oil. Pour the egg mixture into the skillet, spreading it evenly.
- Cook on medium-low heat for about 5-7 minutes, or until the edges begin to set. Gently lift the edges with a spatula to allow uncooked egg to flow underneath.
- Once the bottom is set, cover the skillet with a lid and cook for an additional 5 minutes until the top is firm.
- Carefully flip the tortilla onto a plate, then slide it back into the skillet to cook the other side for about 3-4 minutes.
- Once fully cooked, transfer the tortilla to a cutting board and let it cool slightly before slicing into wedges.
- To serve, take a lettuce leaf and place a wedge of the tortilla inside, wrapping it up like a burger.
