Ingredients
- Nopal cactus pads - 200 grams
- Eggs - 2 large
- Cheddar cheese, shredded - 50 grams
- Red onion, finely chopped - 30 grams
- Fresh cilantro, chopped - 10 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Begin by rinsing the nopal cactus pads under cold water to remove any dirt or debris. Pat them dry with a paper towel.
- Using a sharp knife, remove the thorns and edges from the cactus pads, then slice them into small strips or dice them into small pieces.
- In a skillet, heat the olive oil over medium heat. Add the chopped nopal cactus and sauté for about 5-7 minutes until they become tender and slightly translucent.
- Add the chopped red onion to the skillet and continue to sauté for another 2-3 minutes until the onion is softened.
- In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet over the nopal and onion mixture.
- Cook for about 5 minutes, gently stirring to scramble the eggs until they are just set.
- Sprinkle the shredded cheddar cheese and chopped cilantro over the top and cover the skillet to allow the cheese to melt, about 2-3 minutes.
- Once the cheese is melted, remove from heat and serve warm, garnished with additional cilantro if desired.
