Ingredients

  • Nopal cactus pads - 200 grams
  • Eggs - 2 large
  • Cheddar cheese, shredded - 50 grams
  • Red onion, finely chopped - 30 grams
  • Fresh cilantro, chopped - 10 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Begin by rinsing the nopal cactus pads under cold water to remove any dirt or debris. Pat them dry with a paper towel.
  2. Using a sharp knife, remove the thorns and edges from the cactus pads, then slice them into small strips or dice them into small pieces.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped nopal cactus and sauté for about 5-7 minutes until they become tender and slightly translucent.
  4. Add the chopped red onion to the skillet and continue to sauté for another 2-3 minutes until the onion is softened.
  5. In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet over the nopal and onion mixture.
  6. Cook for about 5 minutes, gently stirring to scramble the eggs until they are just set.
  7. Sprinkle the shredded cheddar cheese and chopped cilantro over the top and cover the skillet to allow the cheese to melt, about 2-3 minutes.
  8. Once the cheese is melted, remove from heat and serve warm, garnished with additional cilantro if desired.
