Ingredients

  • Corn masa harina - 1 cup
  • Water - 3/4 cup
  • Sea salt - 1/2 teaspoon
  • Coconut oil - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Avocado - 1, sliced
  • Cherry tomatoes - 1/2 cup, halved

Steps

  1. In a mixing bowl, combine the corn masa harina and sea salt.
  2. Gradually add water to the masa harina, mixing with your hands until a dough forms that is moist but not sticky.
  3. Divide the dough into 4 equal balls.
  4. Heat a non-stick skillet or comal over medium heat and add the coconut oil.
  5. Place one ball of dough between two sheets of parchment paper and flatten it into a round disc about 1/4 inch thick.
  6. Carefully remove the top parchment and place the tortilla in the skillet. Cook for about 1-2 minutes on each side until lightly browned and cooked through.
  7. Repeat the process for the remaining dough balls.
  8. Once all tortillas are cooked, serve them warm topped with sliced avocado, halved cherry tomatoes, chopped cilantro, and a squeeze of lime juice.
