Ingredients

  • Green bell pepper - 50 grams, diced
  • Onion - 30 grams, chopped
  • Garlic - 1 clove, minced
  • Spinach - 30 grams, fresh
  • Cheddar cheese - 50 grams, shredded
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 10 grams, chopped (optional)

Steps

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced red and green bell peppers, cooking for another 3-4 minutes until softened.
  4. Add the fresh spinach to the skillet, stirring until wilted.
  5. In a bowl, whisk together the eggs, salt, and black pepper until well combined.
  6. Pour the egg mixture over the sautéed vegetables in the skillet, ensuring even coverage.
  7. Sprinkle the shredded cheddar cheese on top of the eggs.
  8. Cook on medium-low heat for about 5-7 minutes, or until the edges start to set.
  9. Using a spatula, gently lift the edges and tilt the skillet to allow uncooked egg to flow to the edges.
  10. Once mostly set, you can either flip the tortilla or place it under a broiler for 2-3 minutes to cook the top.
  11. Remove from heat, sprinkle with chopped cilantro if desired, and slice into wedges to serve.
