- Cheddar cheese - 50 grams, shredded

- Black pepper - 1/4 teaspoon
- Cilantro - 10 grams, chopped (optional)
Steps
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Stir in the diced red and green bell peppers, cooking for another 3-4 minutes until softened.
- Add the fresh spinach to the skillet, stirring until wilted.
- In a bowl, whisk together the eggs, salt, and black pepper until well combined.
- Pour the egg mixture over the sautéed vegetables in the skillet, ensuring even coverage.
- Sprinkle the shredded cheddar cheese on top of the eggs.
- Cook on medium-low heat for about 5-7 minutes, or until the edges start to set.
- Using a spatula, gently lift the edges and tilt the skillet to allow uncooked egg to flow to the edges.
- Once mostly set, you can either flip the tortilla or place it under a broiler for 2-3 minutes to cook the top.
