Steps
- In a pot, add the pork spine with enough water to cover it. Bring to a boil and simmer for about 15 minutes until tender. Drain and let cool slightly before shredding the meat.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the shredded pork spine to the skillet and season with salt, black pepper, and chili powder. Cook for another 5 minutes to combine the flavors.
- In a bowl, whisk the eggs with lime juice and chopped cilantro. Pour the egg mixture into the skillet over the pork and let cook for about 3-4 minutes until the eggs are set, stirring gently.
- Remove from heat and serve hot, garnished with additional cilantro if desired.
