- Zucchini - 150 grams, grated
- Carrot - 100 grams, grated
- Corn kernels - 100 grams (fresh or frozen)
- Chickpea flour - 100 grams
- Fresh cilantro - 20 grams, chopped
- Garlic - 1 clove, minced
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Avocado - 1 medium, for sauce
- Lime - 1, juiced
- Salt - to taste (for sauce)
Steps
- In a large bowl, combine the grated zucchini, grated carrot, corn kernels, chickpea flour, chopped cilantro, minced garlic, cumin, salt, and black pepper. Mix well until all ingredients are combined.
- Form the mixture into small patties, about 5 cm in diameter.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the avocado sauce by blending the avocado, lime juice, and a pinch of salt in a small bowl until smooth.
- Serve the tortas warm, drizzled with the avocado sauce.
