Ingredients

  • Zucchini - 150 grams, grated
  • Carrot - 100 grams, grated
  • Corn kernels - 100 grams (fresh or frozen)
  • Chickpea flour - 100 grams
  • Fresh cilantro - 20 grams, chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Avocado - 1 medium, for sauce
  • Lime - 1, juiced
  • Salt - to taste (for sauce)

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, corn kernels, chickpea flour, chopped cilantro, minced garlic, cumin, salt, and black pepper. Mix well until all ingredients are combined.
  2. Form the mixture into small patties, about 5 cm in diameter.
  3. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side or until golden brown and crispy.
  4. While the patties are cooking, prepare the avocado sauce by blending the avocado, lime juice, and a pinch of salt in a small bowl until smooth.
  5. Serve the tortas warm, drizzled with the avocado sauce.
