Ingredients

  • Zucchini - 150 grams, grated
  • Carrot - 100 grams, grated
  • Corn kernels - 100 grams, fresh or canned
  • Red bell pepper - 50 grams, finely chopped
  • Green onion - 2 stalks, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 3 tablespoons for frying
  • Avocado - 1, sliced for serving
  • Fresh salsa - for serving

Steps

  1. In a large mixing bowl, combine the grated zucchini, grated carrot, corn kernels, red bell pepper, green onion, and cilantro.
  2. Add the egg, flour, baking powder, cumin, salt, and black pepper to the vegetable mixture. Stir until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the mixture into the skillet, flattening it slightly to form a patty. Repeat with more batter, leaving space between patties.
  5. Cook each patty for 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed.
  6. Remove the patties and place them on a paper towel to absorb excess oil.
  7. Serve the tortas warm with sliced avocado and fresh salsa.
