- Zucchini - 150 grams, grated
- Carrot - 100 grams, grated
- Corn kernels - 100 grams, fresh or canned
- Red bell pepper - 50 grams, finely chopped
- Green onion - 2 stalks, finely chopped
- Cilantro - 2 tablespoons, chopped
- Egg - 1 large
- All-purpose flour - 50 grams
- Baking powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 3 tablespoons for frying
- Avocado - 1, sliced for serving
- Fresh salsa - for serving
Steps
- In a large mixing bowl, combine the grated zucchini, grated carrot, corn kernels, red bell pepper, green onion, and cilantro.
- Add the egg, flour, baking powder, cumin, salt, and black pepper to the vegetable mixture. Stir until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the mixture into the skillet, flattening it slightly to form a patty. Repeat with more batter, leaving space between patties.
- Cook each patty for 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed.
- Remove the patties and place them on a paper towel to absorb excess oil.
- Serve the tortas warm with sliced avocado and fresh salsa.
