Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 1 tablespoon

  • Garlic - 2 cloves, minced
  • Tomato sauce - 200 grams
  • Chipotle pepper in adobo - 1 pepper, minced
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Zucchini - 2 medium, sliced into 1 cm rounds
  • Fresh cilantro - for garnish

Steps

  1. In a medium saucepan, heat olive oil over medium heat and add sliced onion. Cook until softened, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add the shredded chicken breast, tomato sauce, minced chipotle pepper, oregano, salt, and pepper. Stir to combine and allow to simmer for about 10 minutes, or until the chicken is heated through and coated in sauce.
  4. While the chicken is simmering, preheat a grill pan over medium-high heat. Grill the zucchini slices for about 3-4 minutes on each side until tender and grill marks appear.
  5. To serve, place the grilled zucchini slices on a plate, top with the Tinga chicken mixture, and garnish with fresh cilantro.
