  • Lime juice - 2 tablespoons
  • Bolillo rolls - 2
  • Avocado - 1 small, sliced
  • Tomato - 1 medium, sliced
  • Lettuce - 1 cup, shredded
  • Jalapeño - 1 small, sliced (optional)
  • Mayonnaise - 2 tablespoons
  • Cilantro - 1/4 cup, chopped

Steps

  1. In a bowl, combine the olive oil, garlic powder, cumin, paprika, salt, black pepper, and lime juice to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it is well-coated. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, preheat a grill or skillet over medium heat.
  4. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  5. While the chicken is cooking, slice the bolillo rolls in half and lightly toast them on the grill or in a toaster.
  6. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes before slicing it into strips.
  7. Spread mayonnaise on the bottom half of each toasted bolillo roll.
  8. Layer the sliced chicken, avocado, tomato, lettuce, jalapeño (if using), and cilantro on top of the mayonnaise.
  9. Place the top half of the roll on each torta and serve immediately.
