- Bolillo rolls - 2
- Avocado - 1 small, sliced
- Tomato - 1 medium, sliced
- Lettuce - 1 cup, shredded
- Jalapeño - 1 small, sliced (optional)
- Mayonnaise - 2 tablespoons
- Cilantro - 1/4 cup, chopped
Steps
- In a bowl, combine the olive oil, garlic powder, cumin, paprika, salt, black pepper, and lime juice to create a marinade.
- Add the chicken breast to the marinade, ensuring it is well-coated. Let it marinate for at least 15 minutes.
- While the chicken is marinating, preheat a grill or skillet over medium heat.
- Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
- While the chicken is cooking, slice the bolillo rolls in half and lightly toast them on the grill or in a toaster.
- Once the chicken is cooked, remove it from the heat and let it rest for a few minutes before slicing it into strips.
- Spread mayonnaise on the bottom half of each toasted bolillo roll.
- Layer the sliced chicken, avocado, tomato, lettuce, jalapeño (if using), and cilantro on top of the mayonnaise.
- Place the top half of the roll on each torta and serve immediately.
