- Cauliflower - 300 grams, riced
- Egg - 1 large
- Almond flour - 30 grams
- Cheddar cheese - 50 grams, shredded
- Green onion - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
Steps
- Start by ricing the cauliflower using a food processor or grater until you have fine pieces resembling rice.
- Place the riced cauliflower in a microwave-safe bowl and microwave for about 5 minutes until tender. Allow it to cool slightly.
- Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained cauliflower, egg, almond flour, cheddar cheese, green onion, cilantro, garlic powder, salt, and black pepper. Mix until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Form the cauliflower mixture into small patties, about 2-3 inches in diameter.
- Fry the patties in the skillet for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel to absorb excess oil.
- Serve warm, optionally topped with avocado or salsa.
