- Nopal cactus pads - 200 grams, diced
- Eggs - 2 large
- Almond flour - 50 grams
- Mexican cheese (queso fresco or cotija) - 30 grams, crumbled
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Prepare the nopal cactus by rinsing it under cold water and removing any spines. Dice the pads into small pieces.
- In a mixing bowl, combine the diced nopal, eggs, almond flour, crumbled cheese, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Spoon about 1/4 cup of the nopal mixture into the skillet for each torta, flattening slightly with the back of the spoon.
- Cook for 3-4 minutes on each side, or until golden brown and cooked through. Add more oil as needed for subsequent batches.
- Remove from the skillet and place on a paper towel to absorb excess oil. Serve warm with your choice of toppings like avocado, salsa, or sour cream.
