  • Lime - 1, juiced

Steps

  1. Begin by flattening the chicken breast to an even thickness of about 1/2 inch using a meat mallet or rolling pin, then season both sides with salt, black pepper, cumin, and garlic powder.
  2. Set up a breading station with three shallow dishes: one with flour, another with the beaten egg, and the third with panko breadcrumbs.
  3. Dredge each seasoned chicken breast in the flour, shaking off any excess, then dip it into the beaten egg, and finally coat it with panko, pressing gently to adhere.
  4. In a skillet, heat oil over medium heat. Once hot, carefully place the breaded chicken in the skillet and fry for about 4-5 minutes on each side or until golden brown and cooked through.
  5. While the chicken is frying, prepare the toppings: slice the avocado and tomato, and mix mayonnaise with lime juice in a small bowl.
  6. Once the chicken is cooked, remove it from the skillet and let it drain on paper towels.
  7. Slice the bolillo rolls in half and lightly toast them if desired. Spread a layer of the mayonnaise mixture on both sides of the rolls.
