Steps
- Begin by flattening the chicken breast to an even thickness of about 1/2 inch using a meat mallet or rolling pin, then season both sides with salt, black pepper, cumin, and garlic powder.
- Set up a breading station with three shallow dishes: one with flour, another with the beaten egg, and the third with panko breadcrumbs.
- Dredge each seasoned chicken breast in the flour, shaking off any excess, then dip it into the beaten egg, and finally coat it with panko, pressing gently to adhere.
- In a skillet, heat oil over medium heat. Once hot, carefully place the breaded chicken in the skillet and fry for about 4-5 minutes on each side or until golden brown and cooked through.
- While the chicken is frying, prepare the toppings: slice the avocado and tomato, and mix mayonnaise with lime juice in a small bowl.
- Once the chicken is cooked, remove it from the skillet and let it drain on paper towels.
- Slice the bolillo rolls in half and lightly toast them if desired. Spread a layer of the mayonnaise mixture on both sides of the rolls.
- Assemble the tortas by placing a piece of fried chicken on the bottom half of each roll, followed by slices of avocado, tomato, and a handful of shredded lettuce.
- Top with the other half of the roll, press gently, and serve immediately while hot.
