- Black beans - 200 grams, cooked and mashed
- Cornmeal - 100 grams
- All-purpose flour - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Avocado - 1, sliced (for topping)
- Sour cream - 100 grams (for topping)
- Tomato - 1, diced (for topping)
- Lime - 1, cut into wedges (for serving)
Steps
- In a bowl, combine the cooked and mashed black beans, cornmeal, all-purpose flour, chopped onion, minced garlic, chopped cilantro, cumin, salt, and black pepper. Mix until well combined.
- Shape the mixture into small patties, about 1 cm thick.
- Heat olive oil in a pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Once cooked, remove from the pan and place on a paper towel to drain any excess oil.
- Serve the tortas warm, topped with sliced avocado, diced tomato, and a dollop of sour cream. Accompany with lime wedges.
