  • Chili powder - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon

  • Bolillo rolls - 2
  • Avocado (sliced) - 1
  • Fresh cilantro (chopped) - 2 tablespoons

Steps

  1. Heat the olive oil in a skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms are tender and any moisture has evaporated, about 5-7 minutes.
  3. Stir in the paprika, cumin, chili powder, soy sauce, maple syrup, salt, and black pepper. Cook for an additional 2-3 minutes, mixing well to combine all the flavors.
  4. While the chorizo mixture cooks, slice the bolillo rolls in half and toast them lightly in another skillet or toaster until golden brown.
  5. To assemble the tortas, spread a portion of the vegan chorizo mixture on the bottom half of each bolillo roll.
  6. Top with sliced avocado and chopped cilantro, then add a spoonful of salsa on top.
  7. Cover with the top half of the roll and serve immediately.
