- Soy sauce - 1 tablespoon
- Maple syrup - 1 teaspoon

- Bolillo rolls - 2
- Avocado (sliced) - 1
- Fresh cilantro (chopped) - 2 tablespoons

Steps
- Heat the olive oil in a skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms are tender and any moisture has evaporated, about 5-7 minutes.
- Stir in the paprika, cumin, chili powder, soy sauce, maple syrup, salt, and black pepper. Cook for an additional 2-3 minutes, mixing well to combine all the flavors.
- While the chorizo mixture cooks, slice the bolillo rolls in half and toast them lightly in another skillet or toaster until golden brown.
- To assemble the tortas, spread a portion of the vegan chorizo mixture on the bottom half of each bolillo roll.
- Top with sliced avocado and chopped cilantro, then add a spoonful of salsa on top.
- Cover with the top half of the roll and serve immediately.
